Bunny Easter cake

Easter is a time for family, loads of public holidays and well chocolate (lost and lots of chocolate). This past weekend in celebration of the Easter weekend coming up I decided to bake a little cake. This particular cake was inspired by the Egg on grass cupcakes I made two years ago.

The cake 

Ingredients:


Method: 
Preheat the oven to 180°C. 

Beat the eggs, gradually adding the sugar until light. 
Add the vanilla essence.

Melt the butter in the milk to make a thin liquid. 

Sift together the flour, baking powder and cocoa. 

Add the dry ingredients to the wet ingredient mixture. 

Mix until smooth and well combined.

 Add the hot butter milk liquid to the eggs sugar mixture. 

Once it's well combined it should be smooth and 
very liquid like (a little runny is perfect). 

Pour the batter into a cake tin. 
Bake for 25-30 minute. 

Allow to cool before icing.

 Icing

Ingredients:


Method:
Lightly beat the butter. 
Add the icing sugar and beat together.

Add a little bit of colouring until it 
reaches the desired colour. 

Ice and decorate the cake.

5. Sleep on your back to fight aging. When your face is squished up against the pillow it creates wrinkles and folds in your skin. Try surrounding yourself with pillows to keep you on your back.

Ferrero Rocher cupcakes

This past weekend I tried a recipe I've been wanting to try for some time now and oh boy was it a delicious treat indeed. Believe me when I say you HAVE to try these cupcakes, they're to die for! The biggest problem I had was not eating all the Ferrero Rocher chocolates before I could use them in the cupcakes. 

Cupcakes

Ingredients:



Method:
Preheat the oven to 180° and line the cupcake tray with paper cups.

In a large bowl whisk together the flour, sugar, 
cocoa, and baking powder.

In another bowl beat together the oil, egg, 
buttermilk and vanilla extract until well combined.

Add the dry ingredients to the wet ingredients.

Scoop a tablespoon of the batter into each cup, 
then place a unwrapped (frozen) Ferrero Rocher 
in each cup and add the remaining batter.

Bake for 16-20 minutes.

Icing

Ingredients:
1 cup powdered sugar
½ cup unsalted butter
¼ cup cream cheese
cup Nutella
113g dark chocolate
2 Tablespoon cocoa powder
A pinch of salt
½ teaspoon vanilla
12 Ferrero Rocher

Method: 
1. Melt the dark chocolate and allow to cool to room temperature.
2. Beat the butter and sugar until light and fluffy, then add the cream cheese.
3. Add vanilla, salt, Nutella, cocoa and melted chocolate.
4. Place the icing in the fridge for 15 minutes (allowing it to set).

Ice the cupcakes.

Garnish with Ferrero Rocher.
