Hallelujah, it's Friday and officially my last working day for 2014! Now I have three weeks of nothing to look forward to, and by nothing I mean lots of friends, special people, family and relaxation.

The era that was Friends

Today's post is a bit of a random one for this little corner but I just had to share these with you. Every morning while having my breakfast I catch a few moments of old Friends episodes being aired on one of the channels. This show was such a huge part of my younger years. And every time I watch an episode I have such a good laugh, even though I've seen the show so many times. This morning's episode in particular (The Cheesecake) got me thinking; which moments are considered to be the funniest?

The Dining Room

This past weekend a bunch of friends and I went to the latest pop up restaurant in Johannesburg (The Dining Room) for a liquid pairing dinner. The evening was of course filled with a lot of laughs (as only we know how to do), way too much food, and a lot of cocktails. It was a cocktail and food pairing dinner after all. 



Vodka, sugar snap peas, lime juice, Martini Bianco 
(With An Origami Boat),

served with Chipotle grilled chicken kebab with 
balsamic pickled onion and jalapeño.

Peach infused don Julio tequila,

served with Refried beans, roasted radish, 
crème fraiche, red onion, coriander 
and avocado ice cream.

Vodka, sparkling wine, elderflower and lime juice
 served with Sous Vide Norwegian salmon, 
crushed potato, Swiss mustard, sour cream, 
spring onion, chives, dill, roe and cedar smoked.

Shiraz, fresh orange, lemon juice, lemonade

served with 48-Hour Ron Zacapa braised 
grass-fed beef short rib on a cauliflower 
and Horseradish puree with fennel chips.

Ron Zacapa on the rocks served with 
liquid popcorn with caramel froth. 

Coffee, orange zest, Frangelico and Signleton 
whiskey served with {Spanish Three Milks Cake] 
burnt white chocolate 
and Ron Zacapa crème, golden tulle.

Friday Funnies

Oh my goodness it's been a long week! It feels like Friday should have arrived three days ago. Then again, I probably only feel this for three reasons: 1. We're currently on deadline at work, 2. I'm on holiday in just over a week and 3. I love my weekends and who I get to spend them with. I look forward to each Friday so much, so right now I'm really happy that it's finally here. So without further delay, let's get down to the business of funnies.

It's that time of year....

It's getting to that time of the year. A time when the brain is slowly switching over to holiday mode (I think mine is already halfway there), work is only getting busier by the day and the days feel as if they're dragging along! But the one good thing to come out of this insane time of the year, is the beautiful festive season that awaits us all. 

Whether you'll be free of work commitments for a day, a week, a weekend or three weeks (that's me, *cue jealous rage*), it's about the only thing keeping you going through all this madness. There are also a few other things which have kept me going, and that's all the special moments/people in my life. I mean just look at the amount of fun I've been having.



The sun finally came out and our street looked
 like something out of a fairytale.


Because....hug a giant penguin day!


Way to many cake days at the office lately.


Knowing friends who have this amazing view.

Apple and cinnamon cupcakes

This past weekend, we did a little bit of celebrating. It was a celebration of all that we're thankful for and of the special friendships we have. This is known to most as Friendsgiving. Now here in South Africa we don't celebrate Thanksgiving, although I really think we should. I love the idea of looking at your life and celebrating all that you have, realising how blessed you are (because people tend to focus on only the bad) and just being happy with it. So for this Friendsgiving I was asked to bring along a dessert, and I wanted to make something Thanksgiving worthy. 



Method:
Preheat the oven to 180°.

In a bowl combine the flour, baking powder, 
baking soda, cinnamon, cloves, nutmeg and salt.

In another bowl cream together the 
butter and sugar until light and fluffy.  

Add in the eggs and vanilla until well combined.  

Add the flour mixture and the 
apple juice until well combined.

Fold in the shredded apple.

Fill cupcake cups and bake for 18-20 minutes.

Brown sugar, cinnamon and vanilla icing


Method:

Mix together all of the ingredients 
until light and fluffy.  

Ice your cupcakes as desired.  

I added cute little candy hearts 
for that extra special touch.

I'm thankful....

Thanksgiving is almost here, and this weekend we’Il be having a little friends-giving lunch. Planning the dessert and what I’d like to make for said lunch, got me thinking about all the things I’m grateful for. This last year has been the best one yet. I’ve taken a lot of time to sit back and reflect on my life and where I want it to go, how it’s changed and where it’s at right now! I am incredibly lucky to be able to do what I love and have so many special people in my life. So basically there is a whole lot to celebrate this year.


So in the spirit of being thankful, here is what I’m grateful for

Choc fudge square delights

This past weekend was another gloomy, overcast and rainy one here in Johannesburg. Now if there is one thing gloomy and overcast days make me want to do, it's nothing but veg on the couch, drink coffee and eat sweet treats (it's a deadly combination I tell you). So when it came to baking for this very active weekend, my first choice was of course something with chocolate (rain = chocolate; right?). I was however craving not your ordinary chocolate treat but a fudge filled one at that. So I decided to make these delicious Choc fudge nut squares. 


Method:
Preheat oven to 180°.

In a bowl, combine the first six ingredients.


In another bowl, combine oil, eggs and vanilla.

Add the wet ingredient mixture to the to dry ingredients 
and combine it until it's thoroughly mixed. 
Spread the mixture into a square or rectangular baking tray. 
Bake for 20-25 minutes.


Remove from the oven and cut into squares. 
The size of the squares is your own choice. 

Allow to cool, and serve.

Friday and another overcast and gloomy day here in Johannesburg. But that won't stop it from being another awesome weekend. I have a feeling this is set to be yet another brilliant one, jam packed with all the special people in my life, because like I just read on Twitter: "Psychology says, friendship is not about who you spend the most time with, it’s about who you have the best time with."

The secret to smooth summer legs

Summer is here and now we all know what that means, lots and lots of summer dresses. Coming straight out of winter and if you’re anything like me, your legs are looking a little on the pale side; but that’s nothing a good tan cant fix. As for getting your legs smooth and keeping them that way (for a little while longer) I have just the solution.

Ingredients
¼ cup sugar
½ cup coconut oil
3 tbsp. lemon juice


Method:
  1. Mix together the sugar, coconut oil and lemon juice.
  2. Spread the scrub all over your legs, do this in a circular motion.
  3. Work your way down from your things to your feet.
  4. Repeat this on the other leg.
  5. Gentle rinse the scrub off your legs and shave your legs as you normally would.
  6. Remember to moisturize afterward.



The coarseness of the sugar will get rid of the dead skin, while the lemon juice and oil leave a residue that aids against razor burn.
